Liquid to use

1.33 cups

  • Use about 1 1/3 cups of liquid instead of 2 — slow cookers lose very little to evaporation.
  • Fill the cooker one-half to two-thirds full, put dense vegetables on the bottom and keep the lid on — each peek adds roughly 15–20 minutes.
  • Add dairy, delicate herbs and quick-cooking pasta or seafood in the last 30–60 minutes.

About the Slow Cooker Conversion Calculator

This slow cooker conversion calculator turns the cooking time in a conventional recipe — a stew simmered on the stovetop, a pot roast braised in the oven, a casserole — into a slow cooker (Crock-Pot) time on the LOW and HIGH settings. Enter how long the recipe cooks conventionally and how much liquid it uses, and you get both time ranges plus an adjusted liquid amount.

Slow cookers heat food gently, at roughly 170–280°F, with the lid sealed, so dishes take several times longer than in the oven and almost no liquid evaporates. That is why converted recipes usually need less broth or water, and why a 45-minute stovetop stew becomes a 6–8 hour LOW cook. LOW takes about twice as long as HIGH; LOW is better for tough cuts and all-day cooking.

Times follow the conversion chart published in most slow cooker manuals and cookbooks. Cookers vary in wattage and size, so check meat with a thermometer and use the shorter end of the range for a newer, hotter model. For food safety, USDA advises always thawing meat and poultry before it goes in the slow cooker.

How to use the slow cooker conversion calculator

  1. 1Enter the oven or stovetop cooking time from the original recipe.
  2. 2Enter the total liquid (broth, water, wine, sauce) in cups.
  3. 3Choose the type of dish so the liquid is adjusted correctly.
  4. 4Pick LOW for all-day cooking or tough cuts, HIGH when time is short.
  5. 5Check meat with a thermometer at the start of the range.

Formula and method

Conventional ≤ 30 min → LOW 4–6 h / HIGH 1.5–2.5 h; 30–60 min → LOW 6–8 h / HIGH 3–4 h; > 1 h → LOW 8–10 h / HIGH 4–6 h

Slow cooker conversions are not a single multiplier because a slow cooker spends its first hour or two just bringing food up to simmering temperature. Instead, the calculator uses the banded chart found in most slow cooker manuals: short-cooking recipes take 4–6 hours on LOW, medium ones 6–8 hours, and anything that cooks an hour or longer conventionally takes 8–10 hours. HIGH takes roughly half as long as LOW.

Because the lid traps steam, liquid is reduced for braises and casseroles (by one-third by default, or by half for very saucy dishes). Soups, chilis and stews keep their full liquid. The output is the recipe’s liquid multiplied by the kept fraction.

Worked examples

Two-hour oven pot roast

A pot roast that braises 2 hours in the oven falls in the “1–3 hours” band: 8–10 hours on LOW or 4–6 on HIGH. Its 2 cups of braising liquid are cut by a third to about 1⅓ cups.

25-minute stovetop chili

A chili that simmers 25 minutes takes 4–6 hours on LOW or 1½–2½ hours on HIGH. As a soupy dish it keeps all 3 cups of liquid.

45-minute chicken casserole with a creamy sauce

Forty-five minutes conventionally converts to 6–8 hours on LOW or 3–4 hours on HIGH. Cutting the 1½ cups of sauce liquid by half leaves ¾ cup; stir in any cream near the end.

Frequently asked questions

How do I convert oven time to slow cooker time?+

Use the standard chart: 15–30 minutes in the oven becomes 4–6 hours on LOW or 1.5–2.5 hours on HIGH; 30–60 minutes becomes 6–8 hours LOW or 3–4 HIGH; an hour or more becomes 8–10 hours LOW or 4–6 HIGH.

Is 1 hour on HIGH equal to 2 hours on LOW?+

Roughly, yes. Both settings reach about the same final simmering temperature, but HIGH gets there faster, so HIGH cooking times are about half of LOW times. Tough cuts often turn out more tender on LOW.

Do I need to reduce liquid when using a slow cooker?+

Usually. A sealed slow cooker loses very little moisture, so braises and casseroles can end up watery. Cut liquid by about a third (or by half for saucy recipes); keep it the same for soups and stews.

Can I put frozen meat in a slow cooker?+

USDA advises always thawing meat and poultry before slow cooking, because frozen pieces can stay in the bacterial danger zone (40–140°F) too long while the cooker heats up. Thaw in the fridge first.

Can I leave a slow cooker on LOW all day?+

Yes. Slow cookers are designed for unattended cooking, and USDA says it is safe to cook foods on LOW the entire time. Keep the lid on, and if the power goes out while you are away, discard the food.
